Romaine and Cucumber Salad

Romaine and Cucumber salad is a simple yet scrumptious meal or side dish. The freshness of the cucumber makes this herblicious salad so refreshing and light. Cook up some chicken or a grilled stead and add this beauty to complete your meal or simply eat it as a light lunch.

Equipment

  • cutting board
  • sharp knife
  • large bowl

Ingredients
  

  • 1 large English cucumber thinly sliced
  • 2 heads romaine lettuce chopped or shredded
  • 1 green onion thinly sliced on the bias
  • 1 tbsp fresh parsley chopped
  • 1 tbsp fresh cilantro chopped
  • salt Kosher
  • pepper freshly ground
  • Ranch or your favorite vinaigrette dressing

Instructions
 

  • Place lettuce in a large bowl. Arrange cucumbers on top of the lettuce. Add onions, cilantro and parsley to the top.
  • Serve with your favorite dressing or oil and vinegar. Add salt and pepper to taste.

Notes

This salad can layered on a platter by placing the lettuce in the middle and arranging the cucumbers around the lettuce. Add the herbs to the top of this. I layered this way for a dinner party and my kids love cucumbers, so I made it easier for them to get the cucumbers over messing up the salad.
Switch up the lettuce for what you like and add tomatoes, sliced red onions, olives and croutons. 
Add roasted chicken to the top to make a meal or serve with grilled meat to make a fabulous dinner.
