Chicken Strawberry Spinach Salad
Chicken Strawberry Spinach Salad is a perfect light meal for lunch or dinner. The sweetness of the strawberries and savory rotisserie chicken pairs quite nicely with the crunch of the salad. It's like a party in your mouth. Let's eat!
Equipment

- sharp knife
- large bowl
Ingredients
- 2 cups Rotisserie or roasted chicken chopped, cubed or shredded
- 5 cups fresh spinach
- 1 1/2 cups strawberries thinly sliced
- 1/2 cup feta cheese crumbles (optional)
- Balsamic vinaigrette dressing homemade or store bought
- salt kosher
- pepper freshly cracked
- 1 tbsp fresh parsley chopped (optional)
Instructions
- In a large bowl toss together the spinach, strawberries, and chicken.
- Drizzle dressing over mixture and toss to coat. Sprinkle feta cheese and parsley over the top. Add Kosher salt and pepper to taste
- Portion on plates or bowls and serve immediately.
Notes
Chicken, spinach and strawberries can be added together and refrigerated for later. Just do not add the dressing until you are ready to serve, or spinach will wilt.
Any lettuce or cabbage can be substituted with the spinach or a spring mix.
Serve dressing at the table or on the side instead of mixing it into the salad.
Serve with toasted crusted bread or a bowl of soup.
Mix it up and add thinly sliced red onion, roasted pecans or walnuts, or strawberry vinaigrette.
